Did you know today is “Eat Ice Cream for Breakfast” Day?! I really wish everyday was this wonderfully spectacular day because I would be a little more excited to crawl out of bed if there was a bowl of ice cream with my name on it. At the same time…I am an adult and can kind of eat whatever I want so…today will be for those kids that just really want to get a nice sugar rush, and the parents can’t say no! ;)
I partnered with Molly Moon’s Homemade Ice Cream to make this delectable breakfast, topped with the most delicious Salted Caramel Ice Cream! It’s seriously the saltiest caramel I ever had, which I feel is hard to come by. I love the smoothness this ice cream has, which makes it perfect over some warm French Toast! This recipe is so easy, especially because the salted caramel is all from the ice cream!
4 pieces of thick bread, like brioche
1/2 Cup Cream
1 Teaspoon Pure Vanilla Extract
Salted Caramel Ice Cream
Heat your skillet on Medium Heat with a little butter. Whisk together the eggs, cream, and vanilla. Take the bread and dip into bowl, making sure to cover the entire piece in the egg mixture. Drop in the skillet and flip when the bread starts to brown. Do this until all the pieces are nice and toasted! Top your French Toast with a scoop of Molly Moon’s Salted Caramel Ice Cream and drizzle on Maple Syrup. When the ice cream, starts to melt, it gets soaked up by the bread, creating a salty caramel syrup! YUM. If you’re feeling really crazy, top with whipped cream and crushed peanuts.
