vanilla peppermint sugar cookies

i’ve always enjoyed decorating sugar cookies because they’re simple to make and a great surface for frosting and adding a personal touch. ever since i discovered alison and her cookie party, i’ve been working on my skills to get these bad boys good enough to sell. unfortunately, i must confess something…i HATE, dare i say, despise, royal icing. don’t get me wrong, it looks awesome and you can detail a cookie insanely well, but it’s hard and crunchy and just not good. this recipe is from my grandma who got it from her grandma, so i’ve grown up eating and decorating these since i was little. now i can share it with you! and the frosting is very tasty!

vanilla peppermint cookies: a family recipe

C O O K I E  I N G R E D I E N T S
2/3 c. butter
2/3 c. sugar
2 eggs
2 3/4 c. sifted flour
1/2 tsp. baking powder
1 tsp. vanilla
1 tsp. peppermint extract

S T E P S
1 / Preheat oven to 375 degrees.
2 / combine softened butter and sugar and blend until creamy.
3 / add in eggs, blend until fully incorporated.
4 / add vanilla and peppermint, blend until fully incorporated.
5 / Whisk all dry ingredients together and slowly add to the mixture. Blend until the dough is sticky.
6 / Divide dough into 2 balls and wrap in saran wrap. Store in fridge for an hour.
7 / dust a cutting board with flour and roll out one ball of dough at a time, about 1/4″ thick.
8 / bake for 7-9 minutes!

F R O S T I N G  I N G R E D I E N T S
3-4 c. powdered sugar
1/4 c. milk
3 tbsp. butter
1 tsp. peppermint extract

this frosting recipe is definitely made up of guidelines rather than exact measurements. When you combine all these ingredients and mix, you will soon realize it may be too dry or too runny, so add more powdered sugar if it’s too runny or more milk if it’s too dry. easy! the same goes with the peppermint extract. i love a very peppermint-y cookie! as for consistency, i prefer it a little thicker so you don’t need to worry about it running off the cookie or never setting. Separate the frosting into bowls and add food coloring. I just used a knife with a pointy tip to spread on the frosting. the frosting tastes really good and will harden slightly on the outside, but will stay soft on the inside. this is great because you can store them on top of each other without mashing them!
