I’ve always been a sucker for brunch, especially if it involves Mimosas and pancakes, yum. When Paperless Post reached out to me asking what my ideal brunch would entail, I was happy to set something in motion! I tried to keep my ideas simple and inexpensive, because let’s face it, no one wants to spend an arm and a leg on decor, invitations, food, etc. Luckily Paperless Post has the invites taken care of, and there are so many to choose from! They help you create online and paper stationery that reflects your individual aesthetic, and it’s all customizable!
As a person who likes to make things as easy as possible, I have to say I definitely succeeded with this mini brunch. I included the steps for making a stationery backdrop, mini pancakes, and some crescent rolls with a breakfast twist!
MINI PANCAKES WITH A STRAWBERRY GLAZE
You will need –
Raspberries or any fruit
Originally I was planning to make a simple glaze from confectioner’s sugar and milk, but I decided try melting frosting. Turns out it’s a super delicious alternative! It doesn’t make the pancakes soggy like a glaze does and once it hardens, it just makes the little pancakes taste extra yummy. I used a strawberry frosting for these little guys, but you can use vanilla and add whatever flavor you’d like.
BACON AND CREAM CHEESE CRESCENT ROLLS
You will need –
Whipped Cream Cheese
Cooked Bacon, crumpled up into pieces
Green Onions, chopped
Preheat the oven to 375 degrees. Pop open the container and pull apart each roll. Spread out the cream cheese in a thin layer, then add the bacon and green onions. (You don’t need too much!) Roll them up and bake until golden brown.
COLORFUL STATIONERY BACKDROP
I have collected stationery for quite some time now and have gotten so many gorgeous cards from A Beautiful Mess and their Happy Mail subscription. I tend to hoard all of the cards without sending them to anyone, so I decided to put these colorful cards to good use! (I also added some postcards from Ban.do.) Starting from one corner, align several cards creating a straight vertical line. I used double sided tape which held up quite nicely and made a collage. Easy peasy!
